I have seen throwers hook the sheaf from front and side. Is there any advantage in either or does it come down to personal preferance?

Rob, I am trying to get as much weight under the fork as possible.  With most sheaves, this is from the corner.  This also means taking a little of a "bite" as possible, which means I hook less of the bag than you do in the photos.

The idea is to drag the weight behind the bag and then when I "check mark" the bag it begins to pendulum and it "flicks" off the end of the fork creating that satisfying "twang" sound!  Hope that makes sense.

I try to get the least distance between the bottom of the bag and the ground.  Whatever allows me to do that is the way I do it.  Of course that all depends on the shape of the bag by the time it's my turn to toss it.

Lots of cube-shaped bags these days, too.

I take as little bite as possible, as well.. But I also try to find the spot that leaves me furthest off the ground, as well. I am short and I can't dig as deep which has caused me to alter my form to compesnsate. I don't think that there's an advantage just in where you pick the bag. The only thing that I use to govern where to pick it is A; the size and shape of the bag, and B; where I can find a place to get a bite that won't stick to my tines.
